I love cocktails. I was never in this life meant to be a bartender, but I swear I trek all over the city looking for great libations that can entice me in every mood. Sometime I want something classic and straight forward. Sometimes I want something funky and innovative. But sometimes, especially when the thermometer threatens triple digits, I want something fresh and light. This cocktail delivers on all the things I want for a summer (or almost summer) day of grilling in the backyard. The cucumber keeps things light without being too sweet and the lime keeps things tart and fresh. And the tajin on the rim is salty/spicy. All the things I want in my life. All this cocktail requires is being able to dump some stuffs in the blender so go forth and get your drink on!

CUCUMBER JALAPEÑO MARGARITA:
makes 1 1/2 quarts

1/2 english cucumber, chopped
2 jalapeños, seeds and stem removed
8 oz lime juice
12 oz tequila blanco
8 oz filtered water
3 oz simple syrup
ice
lime wheels, for garnish
tajin, for garnish

Blend cucumber, jalapeño, lime juice, water and simple syrup until very smooth. Stir in tequila. 

Dip serving glass rims in water and then coat with tajin. Fill with ice and fill with cocktail. Garnish with lime wheel.
