I’ve recently been asked for more breakfast and brunch recipes (I love that you guys love breakfast as much as I do!). One of the best things you can make for breakfast is oatmeal! Not only do most people have the ingredients on hand, but it’s so fun to customize with different flavors. If you know me, you know I’ve always got bananas ripening on my counter. I can’t always make banana bread (I mean, I can, but I’m trying to eat well after the holidays), so I’ve got to turn to other applications for those bad boys! Trader Joe’s also just started selling cacao nibs and I’ve been looking for something to do with them so here we go! A super simple bananas foster oatmeal recipe (no rum, sorry folks) sprinkled with cacao nibs for a little chocolate and crunch! Bonus: Make it vegan by swapping in almond milk and vegan butter!

Yield: 2 servings

bananas foster oatmeal with cacao nibs

prep time: 5 minscook time: 10 minstotal time: 15 mins

ingredients:

  • 1 1/2 cups quick cooking oats
  • 2 cups water
  • 2 cups milk
  • 1/2 cup brown sugar, divided
  • 1/2 teaspoon ground cinnamon
  • 2 tablespoons unsalted butter
  • pinch of kosher salt
  • 2 bananas, sliced
  • 1 tablespoon vanilla extract
  • cacao nibs, for sprinkling

instructions:

  1. In a medium saucepan, add oats with milk and water. Cook over low heat until oats are soft. Add cinnamon and 3 tablespoons of brown sugar. Set oatmeal aside. 
  2. In a small nonstick pan, melt the butter until it's foamy and lightly golden brown. Add the bananas and brown sugar and cook until a syrup forms and bananas are golden brown. Add a pinch of kosher salt and vanilla extract and cook for 1 minute more. 
  3. Portion oatmeal into two bowls and top with bananas and sauce. Sprinkle with cacao nibs and serve right away.
